Aaloo Pulao – A Simple, Tasty and Easy to Cook Recipe

Aaloo Pulao (Aaloo Pulav) recipe or we can just refer to it as aaloo rice (potato rice) is super easy to cook and you don’t need to spend a lot of time to prepare this recipe.

I have used baby potatoes for this Aaloo Pulav recipe. But you can use normal sized potatoes also if you don’t get baby potatoes. I use baby potatoes for this recipe as it just enhances look of the recipe. I have prepared this Potato rice recipe in ghee, however, you can also cook this Pulav recipe in ready made butter and that will taste good too. For this recipe, I would recommend to use ghee or butter and not oil. Because potatoes when roasted or stir fried in ghee taste amazing.

To give it a light greenish look, I added frozen green peas as I did not have coriander for garnishing at that moment. So we can even call this as Aaloo Matar Pulao or Aaloo Mutter Pulav. Green peas was just a replacement for coriander and adding peas to Aaloo Pulav doesn’t spoil the recipe anyway. So depending on what you prefer, you may either choose to add green peas or you can skip it as well.

Cooking method for Aaloo Pulav Recipe

  1. Take a vessel and transfer rice to it. Rinse rice well for about 3 to 4 times, until starch from rice is completely washed away.

  2. Add water to rice. This is how I measure the water level as shown below.

    For any pulao or pulav recipes we need separated rice grains and not sticky rice. If water quantity is less, we can adjust it later accordingly. But, if we add lot of water initially, rice gets overcooked and we end up in Khichdi Recipe and not Pulav. 😀
  3. Close the lid and cook rice on medium flame initially until water is reduced. Later lower the flame and allow to cook rice just for a minute.

    While rice is cooking, we can simultaneously get potatoes pressure cooked to save time.
  4. Pressure cook potatoes for 3 whistles. Allow pressure cooker to settle and take out potatoes. If potatoes have not become tender then cook for a couple of more whistles.

    You can either rinse potatoes first and transfer to pressure cooker or you can pressure cook first and then rinse (this helps to make potatoes little warm instead of waiting for them to become warm). Another time saving hack 🙂
  5. When rice is cooked, separate it with fork and check that rice grains are not sticky.

  6. Peel off potatoes and cut each potato into two halves.

  7. Heat non-stick pan and add 1.5 tablespoon of ghee to it. Then add potatoes.

  8. Stir fry/roast potatoes on a medium flame until they are nice golden in color from all sides.

  9. Now move potatoes around the edges of pan. Add green peas, turmeric, veg biryani masala, salt and remaining ½ tablespoon of ghee to center of the pan.

    Make sure to rinse frozen green peas before adding to the pan or you can rinse initially and keep it aside.
  10. Mix well and cook for a minute on medium flame.

    If you use fresh peas, you have to cook for another few more minutes for peas to be cooked. This Aaloo Peas masala mix tastes great. You can even serve this as a side veggy with roti, phulke, puri etc.
  11. Lastly add cooked rice.

  12. Mix well, cover with lid and cook on a medium flame to get nice hot rice.

    Don't forget to serve it with Raita. Or you can also choose to serve this Potato Rice recipe with plain Arhar(toor) dal or Dal Tadka as well.
