I am not very sure how this recipe was named as Chamchamiya but my guess is that as Bajra chamchamiya shines so it must be named based on the word “chamakana” which means to shine. Bajra Chamchamiya is very easy and simple to cook with just a few basic ingredients available in your kitchen. Bajra Chamchamiya or Bajra cheela is a healthy and nutritious Gujarati winter special recipe which is prepared from bajra aata, some spices and spinach etc. This Bajra Cheela recipe keeps body warm and hence is a perfect recipe for winter season.

Ingredients For Bajra Chamchamiya

Cooking method for Bajra Chamchamiya Recipe

  1. Rinse spinach, coriander, chilli, ginger and garlic.

  2. Finely chop spinach and coriander.

  3. Grind green chilli, ginger and garlic (or you can just grate or finely chop and add).

    Just grinding 1 tablespoon ginger, garlic, chilli won't be a good idea. You can grind more and refrigerate it and use later whenever needed. Also, you can add little salt, lemon juice and some tadka to the crushed ginger, garlic, chilli paste and serve as spicy side chutney with any main course if you prefer to eat raw chilies. I have used ginger, garlic and chilli chutney which I had left over from my other recipe.
  4. Take a large mixing bowl - add bajra flour, semolina to it.

  5. Add finely chopped coriander, cumin powder, salt, turmeric powder, asafoetida, sesame seeds (1 tablespoon), ginger chilli garlic paste and carom seeds (remember to crush carom seeds with hands for nice flavour of carom seeds).

    1 tablespoon sesame seeds added to the batter and we need remaining 1 tablespoon to sprinkle on the Bajra Mini Uttappam for nice looks.
  6. Now add finely chopped spinach and curd to it, and mix all the ingredients.

  7. Add water to adjust consistency and mix well.

  8. Pouring consistency batter for Bajra Pancakes or Bajra Chamchamiya is ready.

  9. At last, add baking soda (or soda bicarb) and mix well.

  10. Heat tawa, spread some ghee and sprinkle sesame seeds on tawa.

  11. Pour a spoonful of batter on tawa and spread to form a mini size round shape and cook on medium flame until it becomes crisp on one side.
    Sprinkle some sesame seeds on the top when the batter is still wet so that sesame seeds will stick to the batter nicely.

    We can make 3 to 4 mini sized Bajra Chamchamiya on standard sized tawa. You can use any standard tawa or also mini uttappam tawa to cook this.
  12. When cooked on a side, apply ghee on the top and flip over to cook on the other side too. This is to make sure that Bajra Chamchamiya becomes crisp on both the sides.

  13. Bajra Chamchamiya is ready. Similarly cook all the remaining Bajra Chamchamiya in batches and apply ghee which makes it look shiny.
