Dabeli recipe is a special street food from Gujarat and Mumbai. Dabeli recipe is also known as Kutchi Dabeli or Kacchi Dabeli as it’s originated in Gujarat’s Kutch (Kachchh) region.
Stuffing for Dabeli recipe is prepared from boiled potatoes, a special Dabeli Masala and a few other ingredients. Potato or aaloo stuffing is filled inside the Pav (or bun) with some ingredients like sweet tamarind chutney and green mint chutney with few other ingredients for garnishing. First heat a kadhai and add coriander seeds, cumin seeds, fennel seeds, clove, black pepper, black elaichi, cinnamon, sesame seeds to the kadhai to prepare Dabeli Masala.

Roast all spices on medium to high flame for 3 to 4 minutes. Later turn off the flame and add sugar, black salt and mix well.
Turning off the gas is important because sugar will melt otherwise. -
Now turn on the flame. Add desiccated coconut, mix well and roast for 1 to 2 minute on medium flame.

Lastly add red chilli powder to it, mix well and turn off the flame. Allow to cool.

Transfer all dry roasted ingredients to mixing jar.

Grind for 2 to 3 minutes until masala turns smooth.
You can store this Dabeli masala for later use. -
Now first let's mash boiled potatoes.

Now heat kadhai, add 4 to 5 tablespoons oil to kadhai. Once oil is hot, add 4 tablespoons of Dabeli masala to the oil and stir fry for 3 to 4 minutes for nice aromatic flavour.

Now add boiled potatoes to the spices, add salt and mix well.

Add water as required and mix well. Allow the mixture to cook on a medium to high flame for about 7 to 8 minutes.

Keep mashing potato chunks to make the stuffing smooth and cook for another 10 to 12 minutes on medium flame. This helps in blending the dabeli masala aroma in the potatoes mixture.

Lastly add coriander, mix well and turn off the flame. Allow the mixture to come to room temperature.

Now let's prepare spicy peanuts. Take roasted peanuts to bowl, add ½ tablespoon dabeli masala, ½ tablespoon red chilli powder, ½ tablespoon chaat masala and 2 tablespoons of lemon juice.

Heat a kadhai and add just a little oil(¼ tablespoon) to it. Add remaining ½ tablespoon Dabeli masala to the oil, mix well. Later transfer spiced peanuts to kadhai.

Roast peanuts for 1 to 2 minutes and allow it to cool
This is must step for making peanuts crunchy and nice in looks. -
Once dabeli masala mixture is cooled down transfer it to a nice decorative bowl and garnish with pomegranate kernels, spicy peanuts, coriander and butter.
This mixture tastes amazing. You need not to stuff this Dabeli mixture only in Pav. But you may also use this stuffing in roti to make it more healthier recipe. -
Finally take pav, cut it in the middle. Apply green mint chutney, sweet tamarind chutney and approx a tablespoon of aaloo dabeli stuffing. Also add some pomegranate kernels, spicy peanuts and finely chopped onion.

Heat a non-stick tawa, spread butter on to it and place dabeli mixture stuffed pav. Apply butter on the top of the Pav also.

On medium to high flame, roast dabeli masala stuffed pav on both the sides to become crisp.

Dabeli Masala stuffed Pav are roasted now and they are nice crisp on both sides. Time to serve.

Take Dabeli, dip it into sev and also apply sev on the all open ends of pav.

Take out Dabeli to the serving plate, arrange onion, spiced peanuts, pomegranate kernels, sev and add grate cheese on top. Similarly prepare all Dabeli.
