Handvo is a vegetable cake prepared with lentils, rice and bottle gourd with some other ingredients. It is basically a Gujarati food recipe often prepared as snacks or for breakfast. But here we will see a different recipe but made using same batter as used in Handvo. The name of the recipe is Gujarati Handvo Dosa Recipe.

I know it’s funny but yes, I had some leftover batter which I kept reserved from my other Gujarati Handvo recipe. So I decided to use it for preparing this handvo dosa using that batter. We can also consider this Handvo Dosa Recipe as a dosa or pan cake prepared using handvo batter.

I have used the same images from my other Handvo Recipe blog, as the process of making batter is same for both the recipes and I actually used the same batter.

Not only Handvo dosa, but you can also use the same Handvo recipe batter to make other south indian dishes like Idli, Paddu (paniyaram or appe), etc. This Handvo Dosa recipe is a vegan recipe and to make this Gujarati Handvo Dosa vegan friendly, I have used oil instead of Ghee (clarified Butter). However, you can use ghee instead of oil if you are not a veganism follower.

I have served Handvo Dosa with simple coconut chutney. You can serve this Gujarati Handvo Dosa with any chutney or ketchup, as you like.

Cooking Method for Handvo Dosa Recipe

  1. Rinse rice and dal (lentils) until water is clear. Add water and soak for 4 hours.

  2. After 4 hours transfer dal and rice to a grinder jar with some water in which it was soaked.

    If grinder jar is small then we have to grind all rice and dal in 2 to 3 batches.
  3. Grind to form smooth batter.

    I just keep little coarse because I like that coarse texture.
  4. Rest it overnight for fermentation. You will see some bubbles formed after an overnight fermentation.

  5. Rinse bottle gourd, carrot, chilli, ginger and grate them. Peel off bottle gourd and carrot. And then grate bottle gourd, carrot, chilli and ginger.

    You can also grind chilli and ginger but I just grated them because the quantity of chilli and ginger is very less.
  6. Add ingredients to the handvo batter - bottle gourd, carrot, chilli, ginger salt and baking soda.

  7. Mix well and add just a little water to adjust consistency if required.

  8. Now heat non-stick tawa/pan. Once tawa is nice hot, place a spoon full of batter and spread in circle and drizzle some oil around the edges of dosa.

  9. Flip over to cook from the other side once one side is cooked.

  10. Just cook another side until it becomes a little crisp and then you can serve this yummy Handvo Dosa.
