Kesar Phirni

Kesar Phirni generally comes from Punjabi cuisine or North Indian Cuisines. It's a sweet dessert recipe which is very famous in northern part of India. In some regions of India, Phirni is also known as Kheer, Payasam, Payasa or Payesha. Style of preparing and ingredients of rice pudding varies with Indian regions.

Phirni is a creamy and sweet pudding recipe which is must in North India on festive occasions. I have used Basmati rice for Kesar Phirni, but normal rice can also be used to prepare this Kesar Phirni recipe.

Kesar Phirni

Phirni is a sweet dessert which is prepared from roughly crushed rice while Rice Kheer is prepared from whole rice grains. For Kesar Phirni recipe, remember to grind rice to coarse (roughly crushed) and not to a fine puree.

Phirni is always good to be served as chilled. Rice Kheer can be eaten hot/warm or chilled. Shikoras, small earthen bowls are used traditionally to serve Phirni. Serve chilled Phirni to your family members and special guests.

Kesar Phirni or Firni is from a Punjabi or North Indian Cuisine, a dessert of all time. In some regions of India, Phirni is also known as Kheer, Payasam, Payasa, Payesha. Style of preparing and ingredients of Rice Pudding varies based on the Indian regions.
Ingredients for Punjabi Kesar Phirni Recipe
  • 1/2 liter Milk
  • 5 tablespoons Basmati Rice
  • 1/2 tablespoon Cardamom Powder
  • 3 pinches Saffron Strands
  • 200 milliliters Condensed Milk
  • 5 cloves Pistachios (5 pieces)
Cooking method for Kesar Phirni Recipe
  1. Soak 3 tablespoon rice for half an hour. Drain excess water and grind rice to coarse (roughly crushed).

  2. Kesar Phirni

    Add 1/2 litre milk to the Kadhai or Pan and allow it to heat for 5 minutes.

  3. Kesar Phirni

    Now add coarse rice to the hot milk and keep stirring it.

  4. Kesar Phirni

    Cook until milk reduces to half quantity and then add cardamom powder to it.

    Keep stirring to avoid any lumps in rice.
  5. Kesar Phirni

    Now add saffron strands.

  6. Kesar Phirni

    Add condensed milk to the mixture, mix well and cook for another 5 to 7 minutes.

  7. Kesar Phirni

    Yummy and creamy Kesar Phirni is ready. Transfer this delicious Kesar Phirni to shikoras (clay pots) or in normal glass bowls.

  8. Kesar Phirni

    Add some pistachios slices and saffron strands for garnishing.

    Refrigerate Kesar Phirni for a few hours and enjoy this chilled Rice Pudding (Kesar Phirni).
