Kothimbir Vadi is a Maharashtrian snacks recipe. Coriander in Marathi is called as Kothimbir and Vadi means small pieces. The way laddoos come in round shape, Vadi can be of square, rectangle or diamond shaped. We can refer this recipe as Coriander Tikki (Coriander Snacks) etc. too.

Kothimbir Vadi is a crisp and deep fried snacks recipe. Traditional way of preparing this recipe is by deep frying them. But, not to worry as I haven't deep fried them and still it turns out as crisp, tastes outstanding with mind blowing looks as you can see in the below picture. If you are ok to have deep fried food, then you can fry these Coriander Tikkis after we steam cook them (you will see all the steps below).

Kothimbir Vadi

Method of preparing this Maharashtrian Kothimbir Vadi recipe varies from person to person and can be prepared in different ways. Some people use curd to form a batter for this recipe, and some prepare batter using water. One way is that, Kothimbir is sautéed and besan batter is added to sautéed coriander and then kothimbir vadi is prepared from that mixture. Another way is to mix all ingredients together to form a batter and then cook kothimbir vadi from that.

In this method of Kothimbir Vadi, I am keeping it very simple so that you can prepare these Kothimbir Vadis easily without any hassles. As I prefer to use less oil for recipes, I haven't deep fried this snack. Generally, besan (gram flour) is used for Kothimbir Vadi recipe but I have used moong dal flour instead. You can use besan for this recipe if you don't have moong dal flour available at home.

You can eat these Kothimbir Vadi any time and I don't think it should be bound to any specific time of the day. To enjoy it at its best though, I think evening time is best to have this Vadi accompanied with some Tea (Chai) if you are tea or chai lover.

Ingredients For Kothimbir Vadi Recipe
  • 50 grams Coriander (finely chopped)
  • 150 grams Yellow Petite Split Lentil ( Moong Dal ) Flour
  • 1.5 tablespoon Green Chilli (finely chopped)
  • 1/2 stick Ginger (1/2 inch grated)
  • 1/4 tablespoon Turmeric Powder
  • 1/4 tablespoon Cumin Powder
  • 1/8 tablespoon Asafoetida
  • 3 tablespoons Tamarind Pulp
  • 1 tablespoon Jaggery
  • 1/4 tablespoon Salt (or as per taste)
  • 1/4 tablespoon Baking Soda
  • 3 tablespoons Cooking Oil
  • 1 tablespoon Sesame
  • Water (to adjust batter's consistency)
Cooking method for Kothimbir Vadi or Coriander Tikkis
  1. Preparation Steps

    We just need some simple preparation for this Kothimbir Vadi recipe.

    • Soak tamarind in hot water for about 10 minutes or just boil tamarind in water for about 5 minutes.
    • Once tamarind mixture is warm or cooled down then add some cold water and squeeze out the pulp.

    We just need about 3 tablespoons of tamarind pulp for this recipe.

  2. Kothimbir Vadi

    Take moong dal flour in a mixing bowl and add water to it to adjust batter to a pouring consistency.

  3. Rinse coriander well, finely chop and add to the moong dal flour batter.

    Rinse coriander just before you need it. Don't rinse and keep coriander outside for a longer period as colour of coriander turns darker if kept for longer after rinsing it.
  4. Kothimbir Vadi

    Then add turmeric powder, asafoetida, cumin powder, finely chopped chilies, grated ginger, finely chopped coriander, tamarind pulp, jaggery and baking soda to the batter.

  5. Kothimbir Vadi

    Mix all ingredients.

  6. Kothimbir Vadi

    Take a plate or baking tray, grease with oil and sprinkle some sesame.

  7. Kothimbir Vadi

    Pour batter into the plate and at last sprinkle some sesame seeds on the top too. This will make sure we have sesame seeds stick on both the sides of Kothimbir Vadi which makes Kothimbir Vadi look so pretty.

  8. Kothimbir Vadi

    Add enough water to a large kadhai or pan and place baking tray plate at some height. Then steam cook this batter on high flame for about 10 to 12 minutes.

  9. Kothimbir Vadi

    Check with the help of knife if batter is cooked and doesn't stick to knife.

    Allow to cool down for a few minutes.

  11. Kothimbir Vadi

    Once it's cooled down a bit then cut kothimbir vadi cake into square shape or any other shape you like. Nice and fluffy Kothimbir Vadi is ready. You can eat without shallow frying as well if you can't wait to taste them.

  12. Kothimbir Vadi

    Now heat a non-stick pan, add oil to it and place kothimbir vadi pieces. Cook on medium flame and once crisp on one side flip over to the other side.

  13. Kothimbir Vadi

    It will turn nice golden colour and crisp on one side. Similarly cook the other side too for crispiness. Shallow fry them in two batches if pan is smaller (or you can shallow fry at the same time depends on kadhai or pan size).

  14. Kothimbir Vadi

    Crisp Kothimbir Vadi, your Coriander Snack is ready and can be served with a ketchup or chutney recipes like coconut chutney or mint chutney etc.
