My interest in cooking started at very early stage of my life. At times I was bound to cook only on weekends due to my hectic schedule and that too only the common recipes like Bhel, Pani Puri, Pav Bhaji, Vada Pav etc. Being Maharashtrian these were the obvious choices to start with the weekend experiments.

We generally prepare extra Pav Bhaji at my home so that it lasts for next day and most of the time we like to eat it as Pav Bhaji and not in any other form. This was one time when leftover Pav Bhaji was not sufficient for all of us. And as you would expect, it is not a good idea from refraining anyone from having mouth-watering Pav Bhaji and also we get even hungrier if we see someone else eating delicious recipes in front of us. This is the food recipe exactly for such situations, which allow us to use the leftover food we already have and make everyone smile, happy and of course, sated.

Learn how you can prepare a delicious Pulao recipe using leftover pav bhaji. This leftover pav bhaji pulao tastes very nice and similar to Tawa Pulao recipe. This is another food recipe which lets us use the leftover food so no food is wasted.
Ingredients For Leftover Pav Bhaji Pulao Recipe
  • 125 grams Rice (cook rice before making pav bhaji pulao)
  • 1.5 cup Leftover Pav Bhaji
  • 1 Onion (medium size - 1/2 inch medium thin sliced)
  • 2 Green Capsicum (medium size - 1/2 inch medium thin sliced)
  • 1 Tomato (medium size - 1/2 inch medium thin sliced)
  • 12 Cashew (slip them)
  • 2 tablespoons Butter (Salted)
  • 1/4 tablespoon Turmeric Powder
  • 1.5 tablespoon Kashmiri Red Chilli Powder
  • 1 tablespoon Pav Bhaji Masala
  • 1/4 tablespoon Salt
  • 3 tablespoons Coriander (finely chopped)
Cooking method for Leftover Pav Bhaji Pulao Recipe
  1. You can chop vegetables in any shape as you like but I suggest to dice vegetables into 1/2 inch length thin sliced. This helps your Pulao to look beautiful 😀 .

    Heat a kadhai, add cashews to it. Dry roast for 2 to 3 mins on a medium flame until cashews turn light golden in color.

    Now once cashews are light golden in color, add just a little butter and roast cashews for another 1 to 2 mins which helps them turn aromatic. Once cashews are nice in color and texture, take them out and keep aside.

    To avoid butter getting burnt, remember to add butter only after roasting cashews for 2 to 3 minutes 🙂 .

    Now add some butter to heated kadhai (pan) and then add onions to it. Saute onions for about 30 secs and don't overcook it because we will be adding more veggies next.

    Once onions are lightly sauted, add thin diced capsicum to it.

    Mix well, close the lid and allow it to cook on a medium flame for 2 to 3 minutes. Again I would suggest, don't overcook any veggies to maintain it's texture.

    Now add diced tomatoes also and mix well.

    Move all the veggies to one side of the kadhai (pan) and add remaining butter to another side. Add turmeric powder, kashmiri red chilli powder, pav bhaji masala and mix we

    Mix all the vegetables and masalas.

    You can also have this vegetable mix with any indian flat bread like roti, chapati, tandoori roti etc. Also, you can stuff this vegetable mix to make sandwiches too.

    Now add leftover pav bhaji to sauted mix veggies and mix well.

    Now add cooked rice to leftover pav bhaji and vegetables, add salt and mix well.

  12. Close the lid and allow to cook on a medium flame for 5 to 7 mins for nice hot tawa pulao styled pulao recipe prepared from leftover pav bhaji.

    Now add finely chopped coriander.

    Add roasted cashews to the pulao and mix well, leftover pav bhaji pulao is ready now.
