I like this Leftover roti sandwich recipe so much that I often intentionally cook some extra rotis / chapatis and keep them for next day. With right stuffing and preparation this yummy recipe turns out really well.
I have used potato stuffing for this leftover roti sandwich or leftover chapati sandwich recipe with some minimal ingredients. However, you may choose to prepare this leftover roti sandwich with other vegetables of your choice instead of potato. But, make sure you finely chop vegetables for easy stuffing. Also, it’s good if you use little bit of mashed potatoes along with other veggies because potato helps in binding the stuffing together and makes it’s easy for stuffing to stick to layers of rotis or you may also use some mayonnaise or chutney instead.
I suggest do not refrigerate this leftover roti samosa recipe once you cook this as this will become soggy when you heat it later. So it is best to have it hot as soon as you cook it to enjoy the crispiness of leftover roti sandwich.

Pressure cook potatoes for 3 to 4 whistles.
1. Pressure cooking potatoes and allowing them to cool down is time consuming. So, you may use other veggies instead if you are in hurry. 2. You will see more potatoes in above image. I have used them for other recipe too. -
Once potatoes are cooled down, peel off potatoes, transfer potatoes to a bowl and mash them well.

Add oil to kadhai and once oil is heated, add mustard seed and allow to crackle.

Now add turmeric powder, grated ginger, finely chopped chilies and saute for a minute then turn off the flame.

Now add mashed potatoes to kadhai. Lastly add salt, garam masala, finely chopped coriander.

Mix well.

Divide in equal proportion and make potato balls / rolls.

Now place roti on a plate, take a potato mixture ball and spread the mixture on half portion of roti with the help of spoon and close the roti with other half portion.

Heat tawa, spread some ghee on tawa and place stuffed roti on tawa, cook on medium flame until it turns golden and crisp on one side and flip and cook other side of the roti too.

Once roasted on both the sides, take out on a plate and cut into pieces before serving.

Serve your hot leftover roti sandwich with some tomato ketchup, mint tamarind chutney etc. I haven’t used cheese for this recipe but you may choose to add Cheese while stuffing or on top of this sandwich while serving.
