This Mix Vegetable Fry Recipe or mix veg fry recipe tastes awesome. It looks amazing because of the combinations of vegetables I used. The color of the vegetable is outstanding. Another main course recipe from my collections which is suitable for Vegans.

I don't know whether to quote this Mix Veg Fry Recipe as healthy or unhealthy. Because I have used lot of different vegetables in this recipe but I have deep fried these vegetables.

It's good to choose healthy food. Though I generally prefer to use very less oil for cooking. But sometimes excuses are ok to escape from normal routines. So, I decided to deep fry vegetables instead of stir frying. Still, I didn't want to have excess oil. So, I chose to use kitchen towels to remove the excess oil from fried vegetables. This way I avoided consumption of more oil. You can stir fry these vegetables in non-stick pan with less oil if you don't want to deep fry them. But, taste and texture of this vegetables fry recipe will slightly differ depending on which way you choose.

Ingredients list for the mix vegetable fry recipe is quite big. I would insist you to use all listed vegetables for the color combination and taste. But nothing to worry, as there is no hard and fast rule to use all listed vegetables and you can choose vegetables of your own choice. I have used potatoes, baby corn for cream or whitish color, lady finger, beans, ivy gourd for green color, red and yellow bell peppers for giving nice red and yellow color contrast to make this vegetable colorful. Mix Vegetables Fry or mix veg sabji recipe is mouth-watering, very tasty and suitable for vegans. It goes well with naan, roti, phulke or tandoori roti.
Ingredients For Mix Veg Fry Recipe
  • 2 Potatoes (medium size)
  • 1 Brinjal (medium size)
  • 15 Okra (small size)
  • 15 Beans (sticks)
  • 1/2 Red Bell Pepper (1/2 of large pepper)
  • 1/2 Yellow Bell Pepper (1/2 of large pepper)
  • 6 Baby Corn (small size)
  • 10 Ivy Gourd (Tindora) (medium size)
  • 1 Bitter Gourd (Karela) (medium size)
  • 1 Onion (large size)
  • 2 Tomato (medium size)
  • 2 tablespoons Oil
  • 4 Bay Leaves (small)
  • 1/2 tablespoon Cumin Seeds
  • 1/4 tablespoon Turmeric Powder
  • 1/2 tablespoon Cumin Powder
  • 1/2 tablespoon Coriander Powder
  • 1/2 tablespoon Garam Masala
  • 1/4 tablespoon Red Chilli Powder
  • 1/2 tablespoon Kashmiri Red Chilli Powder
  • 1/2 tablespoon Salt (as per taste)
  • Oil (for frying vegetables)
Cooking method for Mix Veg Fry Recipe
  1. Rinse all the vegetables.

  2. Finely chop onion and tomatoes.

  3. Now dice all remaining vegetables into long chunks and slice bitter gourd into round shape medium thin slices (as shown in ingredients image).

  4. Mix Veg Fry

    Let’s start deep frying all vegetables one by one starting with potatoes, baby corn, ivy gourd, beans, followed by red and yellow bell peppers, brinjal, lady finger and lastly bitter gourd. Heat kadhai, add enough oil to it. Once oil is hot start frying vegetables on medium flame.

    Potatoes will take little more time to fry than other veggies. Don’t mix vegetables when deep frying because every vegetable frying time differs. Some veggies would not be cooked properly and some would be overcooked if you mix them.
  5. Mix Veg Fry

    Place kitchen towel (tissues) on a plate and take out veggies on kitchen towel. Once all veggies are fried, keep them aside. Now let’s move to next process.

    It's good to remove the excess oil (and we won’t be too guilty of having fried food! 😀 ).
  6. Mix Veg Fry

    Heat a non stick pan, add 2 tablespoons of oil to it. Once oil is hot, add bay leaves and sauté for a minute so it turns aromatic.

    Now add cumin seeds and allow to splutter. Then add onion to it and cook onion on medium heat until it turns light golden in color (takes 3 to 4 minutes).

    Later add turmeric powder, coriander powder, cumin powder, garam masala, red chilli powder, Kashmiri red chilli powder and mix well.

    Now add tomatoes, mix well. Close the lid and cook on a medium flame until tomatoes become soft (takes about 3 to 4 minutes).

  10. Mix Veg Fry

    Once tomatoes are nicely cooked, add some water (just a little, not too much) and mash them slightly with the help of spoon and cook for a couple of minutes until onion and tomato masala thickens. Lastly, add salt and mix well.

    Now, except bitter gourd, add all the fried veggies to the onion and tomato masala and mix well.

  12. Mix Veg Fry

    Close the lid and cook for 2 to 3 minutes on a medium flame.

    I prefer to add bitter gourd chips at last because it preserves its crispiness and the recipe tastes awesome. But you can add it while adding all the veggies to the masala too, if you like it that way.

    This recipe goes well with Naan, Phulke, Roti or Chapati, Tandoori Roti etc and while serving this recipe, use some salads and raita for the best combination and for a complete meal.
