Cooking method for Paneer Tikka Recipe with Chutney and Cabbage Salad
  1. Paneer Tikka

Heat a kadhai and add 2 tbsp ghee to it. Then add besan to it.

  2. Paneer Tikka

Roast besan for 2 to 3 minutes on medium flame. Besan quickly thickens when you add it to ghee. However, stir and keep roasting until it's lightly roasted and turns fluffy.

Remember not to dark roast besan because we want to give a yellowish look to Paneer Tikka.
  3. Paneer Tikka

Once besan is light roasted, take out and keep it aside, we need it later.

  4. Paneer Tikka

Cut all the veggies and paneer in rectangle or square shape. But, make sure all of them are of similar size.

  5. Paneer Tikka

Now for preparing marinade, add below ingredients to a bowl and mix well.

    • Hung curd
    • Fresh cream (homemade malai)
    • Mustard oil
    • Roasted besan
    • Finely chopped garlic, ginger and green chilli
    • Chaat masala
    • Coriander powder
    • Cumin powder
    • Black salt
    • Regular salt
  6. Paneer Tikka

If paneer tikka marinade is very thick, add some water and mix well.

You can visit this YouTube Video for complete Paneer Tikka recipe to get a detailed view of the process.

  7. Paneer Tikka

Later add turmeric powder and give it a good mix. Adding turmeric to marinade makes paneer tikka look yellowish and beautiful.

  8. Paneer Tikka

Once marinade is ready, add paneer pieces and vegetable petals to the marinade.

Add paneer and veggies in batches. Don't add all at once as it will be difficult to mix and apply marinade.
  9. Paneer Tikka

Mix everything and apply marinade well to paneer and vegetables. Then tuck them in a skewer.

    • I have used steel metal skewers to prepare paneer tikka. You can use wooden skewers too. However, I prefer to use metal skewers because of the good grip.
    • Metal skewers become hot a bit so carefully handle them and try to use long skewers (Steel skewers with wooden handle would be even better).
  10. Paneer Tikka

Keep the skewers ready with paneer and veggies tucked in and keep those aside.

    Prepare in batches.
  11. Paneer Tikka

Now to prepare mint chutney, add curd to a bowl. Whisk well until curd is smooth. Mix some water if curd looks very thick.

  12. Paneer Tikka

Now add below ingredients to grinder and grind until it's smooth.

    • Coriander
    • Mint
    • Green chilli
    • Ginger
    • Chaat masala
    • Anardana
    • Cumin powder
    • Black salt
    • Regular salt
    • Cooking oil
    • Ice cubes
  13. Paneer Tikka

Now add mint and coriander puree to the curd we whisked earlier.

  14. Paneer Tikka

Mix well and keep it in fridge until we serve paneer tikka. This Mint chutney is perfect and enhances taste of Paneer Tikka.

  15. Paneer Tikka

And now is the time to prepare cabbage salad. Take shredded cabbage to a bowl.

  16. Paneer Tikka

Add below ingredients to the shredded cabbage.

    • Green chilli
    • Chaat masala
    • Black pepper powder
    • Black salt
    • Regular salt
    • Lemon juice
  17. Paneer Tikka

Mix lightly using forks and keep it in fridge as we need to serve this cabbage salad later with Paneer Tikka.

  18. Paneer Tikka

Now turn on the flame and place paneer and veggies tucked skewers on a phulka maker. Keep rotating the skewers and roast them from all side.

Keep adjust flame from low to medium and carefully roast them without burning too much.
  19. Paneer Tikka

Lastly, when paneer tikkas are done, apply some ghee which gives a very nice taste to the paneer tikka.

  20. Paneer Tikka

Now take out Paneer tikka to serving plate and accompany it with cabbage salad and mint chutney that we prepared.

Prepare remaining paneer tikka in similar way.
  21. Paneer Tikka

Paneer Tikka prepared cooked at home tastes amazing and the combination used to serve makes it a complete recipe.
