Who doesn't love to eat paneer starters? There is no reason not to, they are so yummy and tasty after all. Ordering dining starters is a common thing you will see no matter which part of the world you visit. Specially in India, when we visit restaurants, Paneer Tikka is one of the favorite meal starters recipe which many of us like to order. So here I am sharing a way to enjoy this delicious recipe with ease at your own home.
In this blog, I am going to share step by step recipe to show how you can cook Paneer Tikka at home on stove, which will taste as yummy as cooked on tandoor. Not all of us have tandoor at our homes but that shouldn't be a reason to not enjoy this recipe. Here is the way which will allow you to cook Tandoori Paneer Tikka but without using a tandoor - just on your stove, with same technique of flavoured marination, so simple and easy.
In case if you don't know, Paneer is the name given to Indian cottage cheese. This is a homemade Paneer Tikka but just tastes like a restaurant styled Paneer Tikka. This recipe for Paneer Tikka has all spices and flavours needed to fulfil our taste buds. We get a variety of Paneer tikkas in restaurants like - Achari Paneer Tikka, Kali Mirch (Black Pepper) Paneer Tikka and many more. And this recipe which I am going to explain is a mix of all those flavours.
With this Paneer Tikka recipe, I have a special cabbage salad and Mint Chutney to serve it with. Both the cabbage salad and mint chutney recipes are also explained in this blog. Mint chutney would hardly take 2 to 5 minutes time to prepare and cabbage salad will be ready in just 10 minutes too.

Heat a kadhai and add 2 tbsp ghee to it. Then add besan to it.
Roast besan for 2 to 3 minutes on medium flame. Besan quickly thickens when you add it to ghee. However, stir and keep roasting until it's lightly roasted and turns fluffy.
Once besan is light roasted, take out and keep it aside, we need it later.
Cut all the veggies and paneer in rectangle or square shape. But, make sure all of them are of similar size.
Now for preparing marinade, add below ingredients to a bowl and mix well.
If paneer tikka marinade is very thick, add some water and mix well.

Later add turmeric powder and give it a good mix. Adding turmeric to marinade makes paneer tikka look yellowish and beautiful.
Once marinade is ready, add paneer pieces and vegetable petals to the marinade.
Mix everything and apply marinade well to paneer and vegetables. Then tuck them in a skewer.
Keep the skewers ready with paneer and veggies tucked in and keep those aside.
Now to prepare mint chutney, add curd to a bowl. Whisk well until curd is smooth. Mix some water if curd looks very thick.
Now add below ingredients to grinder and grind until it's smooth.
Now add mint and coriander puree to the curd we whisked earlier.
Mix well and keep it in fridge until we serve paneer tikka. This Mint chutney is perfect and enhances taste of Paneer Tikka.
And now is the time to prepare cabbage salad. Take shredded cabbage to a bowl.
Add below ingredients to the shredded cabbage.
Mix lightly using forks and keep it in fridge as we need to serve this cabbage salad later with Paneer Tikka.
Now turn on the flame and place paneer and veggies tucked skewers on a phulka maker. Keep rotating the skewers and roast them from all side.
Lastly, when paneer tikkas are done, apply some ghee which gives a very nice taste to the paneer tikka.
Now take out Paneer tikka to serving plate and accompany it with cabbage salad and mint chutney that we prepared.
