About Peanuts Potatoes or Vrat wale Aaloo ki Sabji
There is a saying in Marathi, “Ekadashi Duppat Khashi” which means you eat twice than any other day (or you end up eating twice) on this Ekadashi day (an auspicious Day in Hindu Calendar) on which people do fasting. Some people may choose these fasting days to detox their body by not eating anything and some may end up eating twice than normal days.
Sometimes I think, on what basis these items were identified and allowed for fasting by our elders, what was the thought behind it? Was it to detox the body or eat something simple by making it tempting 😉.
Anyways, I don’t want to think too much because I like these fasting recipes. Especially sabudana khichdi and peanuts potato veggie.

Ingredients for Peanuts Potatoes Recipe
Cooking method for Peanuts Potatoes Recipe
Pressure cook potatoes for 3 to 4 whistles until they are cooked completely.Only time required is for Pressure cooking potatoes and allowing them to cool down completely.
Finely chop green chilies and coriander. Take half lemon and squeeze lemon juice (around 1 tablespoon) and keep it aside as we need them at later stage.
Once potatoes are cooled down, peel off potatoes and cut potatoes into medium sized chunks.
In kadhai, heat ghee then add cumin seeds and allow them to splutter.I have used ½ tablespoon thick consistency ghee, you may use lesser quantity as well. If you like, you can use peanuts oil also instead of ghee if you are preparing this recipe for fasting. On any other days, you may cook this recipe in normal cooking oil. But, preferable is ghee because this peanuts potatoes recipe tastes awesome when cooked in ghee.
Then add finely chopped chilies and saute for a minute.I have used lots of green chilies but you may choose to use lesser if you prefer it to be less spicy.
Now add potatoes, mix well and cook for 5 minutes on medium heat.
After 5 minutes, add peanuts powder, salt, sugar and mix well.Sugar makes this recipe tasty. Anything without salt is tasteless, similarly, some recipes without adding smaller portion of sugar would also lack in taste. So adding sugar is important, but if you don’t like sugar you may skip it.
Now close lid and cook for another 5 minutes on medium heat.
Finally turn off flame. Add lemon juice, chopped coriander and mix well.
