We don’t have to soak any ingredients for hours as we do for traditional type of dosa or uttapams, which makes this recipe perfect for the times when we are in hurry (well, such times come down to most of the days in today’s world).
I love this Poha Uttapam Recipe as even simple ingredients can make something really tasty like this recipe. I haven’t used any specific masalas for this recipe’s batter and it still tastes amazing. But if you want then you can add any masalas like garam masala, pav bhaji masala etc. to this recipe as per your taste.
These poha uttapams are super soft, so we have to handle these with love and care. Everything cannot be handled rough and tough especially when cooking delicate recipes like these. We have to be very careful in cooking Poha Uttapam otherwise this recipe can get ruined.
I have used a dry mix chutney powder to serve with this recipe which I usually keep ready for instant use. I prepared this mix chutney by adding curd and tempering to it.

Rinse poha with water 2 to 3 times until water runs clear.

Now transfer poha and curd to a grinder jar. Add some water to it and grind for 2 to 3 minutes to make smooth poha batter.

Pour batter into a mixing bowl.

Add gram flour, semolina, salt, finely chopped green chilli and coriander.

Add some water to adjust consistency of batter and mix well.

Now heat a non-stick tawa (pan). Once pan is hot, pour a spoonful of batter and flatten it with the help of spoon to make mini uttappams.
Make sure to spread batter to medium thickness and in small sizes. Don't spread it too thin because this is very delicate poha uttappam and needs to be handled with care. If you spread it too thin then it may break. -
When batter on the pan is still wet, add onions. So it will nicely settle and stick to the batter. Drizzle some ghee around all the edges. Cook on a medium flame until it turns nice golden in colour on one side.

Flip over and cook for just a few more minutes until onions are nicely turned into golden colour too.

Then turn again and add some cheese on the top. Once cheese melts take Poha Uttappam out of the pan for serving.
