Strawberries are used in several recipes like Strawberry Milkshake, Strawberry Ice cream, for preparing Jam and Jelly, puddings, cakes, phirni recipe, or Falooda recipes and many other desserts. For this Strawberry Syrup, we just need two simple ingredients – strawberries and sugar, that’s it. We are not adding any preservatives or corn starch to thicken the syrup. I don’t prefer to preserve this Strawberry syrup as it’s very quick recipe and can be prepared instantly. But if you wish, then you can refrigerate Strawberry Syrup for a week or two. I would recommend that you prepare this Strawberry syrup just a day or few hours before you are going to use it. Fresh syrups have nice aroma and give a nice touch to the recipes you are going to use it in.
You can use this instant Strawberry Jam or Syrup recipe to prepare any other dessert recipes like Ice creams, cakes and many more. You can also use this Strawberry Syrup or Strawberry Pulp to apply on bread slices and I am sure you will love the taste of this homemade Strawberry Syrup.

Wash strawberries well, remove stem and leaves as shown in ingredients image.

Chop strawberries into small or medium chunks.
I have cut strawberries into small pieces as I used few tablespoons of cooked strawberries for Strawberry Ice cream. You can cut it into two halves if you are just planning to use this Strawberry Pulp as jam or for any other recipes. -
Heat a kadhai or pan and add chopped strawberries and sugar to it.
We need to add more sugar later if strawberry is not sweet and tangy. -
Add just little water because it helps to melt the sugar.

Allow to boil strawberries and sugar on medium flame.

Strawberry pieces are cooked nicely and have become soft. Allow strawberry and sugar mixture to cool down or at least to become a little warm.
I just kept aside 4 to 5 tablespoons of cooked strawberry chunks for Strawberry Ice cream. -
Transfer to grinder jar when it has become warm (and not too hot) and blend mixture to form a smooth Strawberry puree or Strawberry pulp.

Now transfer strawberry puree to a kadhai or a cooking utensil. Allow it to boil on a medium flame until strawberry puree thickens and changes to dark red colour.
I haven't strained strawberry puree because I like to keep those small crushed seeds of strawberry in this recipe which allows it to have a pulpy texture. I would recommend the same to you. -
Strawberry syrup is now ready.
