Pressure cook potatoes for 3 to 4 whistles until they turn soft.
Cut top (stem-end) part of bell peppers and remove seeds.
Peel off potatoes when they are little warm and mash them.
Add all ingredients (turmeric powder, sabji masala, chat masala, salt and coriander) to mashed potatoes except oil.
Mix well.
Take a portion of potato mixture and stuff it in the bell pepper.
All bell peppers are stuffed with potato mixture.
Heat non-stick pan and add oil to it. Place all stuffed bell peppers to hot oil. Then just add a little bit of remaining salt on bell peppers and mix well.
Cook bell peppers on a medium flame for about 2 to 3 minutes. Flip over all bell peppers and cook on other side too for few minutes on medium flame.
Repeat above step 2 to 3 times until they turn nice golden in color and become soft.
Turn off the flame when they are nicely cooked and add remaining coriander on top of it for garnishing.
Stuffed Bell Peppers tastes amazing. While you can serve these stuffed bell peppers with Roti or any Indian flat bread recipes like naan, phulke, tandoori roti etc., it is not really necessary. You can just enjoy these stuffed bell peppers as a side dish too.
