This Masala Puri is a very crispy puri recipe which is prepared using wheat flour. This puri recipe is not very spicy but can be called as spicy puri too because it contains just enough spices to taste really good and it is suitable for kids too. This crispy masala puri does not contain plain flour (maida). So it’s a good option for people who are looking for healthier snacks.

Kurkuri means Crispy and along with being crispy, this masala puri is full of flavours. It’s a healthy option for snacks as this is the recipe prepared using very less oil.

This masala puri recipe is a Gujarati style recipe. There is another version of this puri recipe which is called as Farsi Puri or Gujarati Farsi Poori which is prepared using combination of semolina (sooji) and wheat flour along with some other spices. I will share the recipe for Farsi Poori also very soon.

This crispy masala puri is perfect snack recipe or tea time snack recipe which can be enjoyed by people who don’t eat onion, garlic or ginger etc. It contains spices which makes this puri flavorful and tasty without adding garlic or ginger.

Also this kurkuri (crunchy) masala puri is suitable for vegans too as there is no animal (or dairy) products added in this puri recipe. And I think this is the speciality of most of the Gujarati food as they are prepared in such a way that those are suitable for vegans and for people who don’t eat onion, garlic etc.

Though this crunchy masala puri snack is good for your tea times, however, this crispy puri is also a good choice to be used in chaat recipes. You can prepare papdi chaat recipe using these crispy puris or you can just crush some masala puris and add it to chana chaat, chana jor garam or any other recipes that you like.

A perfect Gujarati snacks to have along with tea is masala puri or crispy masala puri. This Crispy puri is a perfect as evening snacks and prepared without maida.

  1. Add below ingredients to a mixing bowl.

    • Wheat flour
    • Coriander powder
    • Cumin powder
    • Salt
    • Turmeric powder
    • Red chilli powder
    • Gram flour (or besan)
    • Sesame

  2. Crush carom seeds with your palms and then add to other ingredients.

  3. Add 1 tbsp hot oil. Hot oil helps in making puris crispy.

  4. Mix all dry ingredients first and then add water required to knead a tight dough.

    A tight dough is really important to make masala puris crispy.
  5. At last apply few drops of oil and knead again. Now cover and let the dough rest for 20 to 25 minutes.

  6. After dough has rested, divide it in equal portions.

  7. Take a portion of dough and roll it out into a thin layer. Apply oil and then roll out.

    Don't use dry flour for rolling out the dough, just use oil.
  8. Make sure the dough layer is really thin.

  9. Cut the dough layer into small pieces.

    • I have used round katori (a small bowl) to shape puris into round and equal sizes. You can use a cutter of any shape as you like.
    • Or you can just cut it using knife into square or diamond shape (like shakarpara).

  10. Now take out the extra leftover sides and mix that with the remaining dough.

  11. Once you have shaped all puris, prick puris using fork. This way puris will become crispy and crunchy.

  12. Now heat enough oil for deep frying puris. Once oil is hot, add rolled out puris to it.

  13. Stir often and fry all puris until they become crispy. Stirring often makes sure that puris get fried evenly from all the sides.

  14. When puris are fried well and look crispy, take them out on a kitchen paper towel. Similarly prepare all puris from the remaining dough.
